    Wok cooking is based on the principle of "wok hei" — the soul of the wok, that slightly smoky flavor that only very high heat can create. To achieve this at home, you need a utensil capable of reaching and maintaining high temperatures despite successive additions of ingredients.

    Ingredients for 4 people

    • 500 g rump steak or flank steak, thinly sliced against the grain
    • 1 red bell pepper, 1 green bell pepper
    • 2 carrots cut into julienne strips
    • 1 onion
    • 3 cloves garlic
    • 1 piece fresh ginger (3 cm)
    • 3 tablespoons soy sauce
    • 1 tablespoon oyster sauce
    • 1 teaspoon cornstarch
    • 1 teaspoon sesame oil
    • 2 tablespoons peanut oil
    • Sesame seeds, green onions for serving

    Step-by-step Recipe

    Step 1 — Express Marinade

    Mix the thinly sliced meat with soy sauce, cornstarch, and sesame oil. Let marinate for 15 minutes at room temperature. The cornstarch will create a thin protective film that keeps the meat tender even at very high temperatures.

    Step 2 — Heat the Wok

    Heat your stainless steel wok over maximum heat for 3 minutes. It should be very hot before adding the oil. Pour in the peanut oil and heat for an additional 30 seconds.

    Step 3 — Sear the Meat

    Add the meat in a single layer — in two batches if necessary. Do not touch for 60 seconds to get a nice sear. Then stir for 1 minute, then remove the meat and set aside.

    Step 4 — The Vegetables

    In the same wok, sauté the garlic, ginger, and onion for 1 minute. Add the julienned carrots, then the sliced bell peppers. Stir-fry over high heat for 3 to 4 minutes — the vegetables should remain crispy.

    Step 5 — Finishing and Serving

    Return the meat to the wok. Add the oyster sauce and one tablespoon of water. Stir vigorously for 1 minute. Serve immediately over white rice.

    J’attends avec impatience mon wok commandé hier…au vue de la recette de bœuf sauté il semble inutile de faire le test de la goutte d’eau ⁉️que je fais bien évidemment à chaque fois avec ma poêle 😉N’est ce donc pas utile de le faire puisque la température est au maximum ⁉️Merci pour vos précieux conseils.
